Pancakes

1 cup all-purpose flour
1 Tbsp. sugar
2 tsp. baking powder
1/4 tsp. salt
1 beaten egg
1 cup milk 
2 Tbsp. cooking oil
Combine the flour, sugar, baking powder, and salt.  Make a well in center of flour mixture; set aside.  Combine the egg, milk, and oil.  Add egg mixture all at once to flour mixture.  Stir just until moistened (batter should be lumpy)  DON'T OVERMIX!  Cook over medium heat about 2 minus on each side or until pancakes are golden brown, turning to second sides when pancakes have bubbly surfaces and edges are slightly dry.  Serve warm.
For whole wheat pancakes substitute whole wheat flour for all-purpose and brown sugar for white sugar.

Enchiladas

Sauce:
4 heaping Tbsp. flour 1 tsp. garlic salt or 1/2 tsp. garlic powder
1 or 2 heaping Tbsp. chili powder 1 can tomato soup
1 tsp. cumin
Enchiladas:
1 lb. hamburger 12 corn tortillas
1 medium onion, chopped
Approx. 1 lb. cheese, grated (i use cheddar jack)
Sauce: Put all dry ingredients in pan; add enough water with a wire whisk to make a smooth paste.  Put over medium heat; add 2 cups more cold water and stir fast.  Continue stirring.  When it starts to thicken, add tomato soup and stir good till blended.  Add salt and pepper to taste.  Add more chili powder if needed.
Filling:  Fry hamburger and onion (season while frying).  Drain and then add about 1/2 to 1 cup sauce.  Set aside.  Deep-fry each tortilla in a small amount of oil for just a couple seconds on each side.  Drain tortillas on paper towels.  Fill tortillas with hamburger and/or grated cheese.  Roll up and place seam side down in a 9 x 13 inch pan.  Pour remaining sauce over top.  Sprinkle with cheese.  Bake at 350, uncovered, for about 15 minutes.

Coconut Chocolate Chip Cookies!

So I was hesitant to put this recipe on my blog because in my opinion these cookies are amazing!  I took what I liked from several different recipes and came up with this.  I don't have a picture either, because everytime we make them they are gone so quick I don't get have a chance to get a picture.  Maybe I will just put up a general cookie picture!  
Mix together in a small bowl: 
3 cups flour
1/2 tsp baking soda
1 tsp salt
1 1/2 tsp baking powder
Mix together in a large mixing bowl:
1 1/4 cup coconut oil - use Spectrum unrefined extra-virgin.  It contains the most flavor.  It's more expensive, but so worth it!
1 1/4 cup brown sugar
1/4 cup sugar
a little more than 1 tsp vanilla
depending on egg size 2-3 eggs.  If extra large eggs, use 2.  If medium or large use 3.
1/2 tsp molasses
Mix your wet ingredients thoroughly and then add dry ingredients.  Mix just till combined.  Then add 2-3 cups chocolate chips.  Press dough into a 9 x 12 x 13 pan.  Bake at 375 for 10- 15 minutes.  Don't overcook!  Enjoy!
